Red Beet Applesauce




I said I was going to try it and I did! I added 4 small red beets, peeled and diced, to my pressure cooker full of apples, and instead of using water, I used juice and a little cinnamon. I love to roast baby beets with orange and cinnamon, so I thought it could work in this case. I would've used orange juice, but we only had TJ's Orange Mango. (You know what's in it? The first ingredient in TJ's Orange Mango is apple juice!)



I loved the result. Bright red and a little chunky, very sweet and nutritious in a different kind of way. Probably lower in calories too, since beets have fewer calories than apples.






Red Beet Applesauce

3-4 lbs of fuji, gala, or another sweet variety of apple, quartered
3-4 small beets. peeled and diced (or shredded)
1/2 c. juice
cinnamon stick (optional)


If using the pressure cooker cut the apples in big chunks because they will cook faster than the beets which need to be in a very small dice (1/4 in.) or shredded, no need to peel the apples as everything will go through the food mill. Add juice and cinnamon if using, bring pressure to high, cook 10 min, let pressure release naturally. When cool enough to handle run through the food mill.


If you are not using a pressure cooker you can use a large pot, bring to a boil, turn down the heat, cover and cook 45-55 minutes (I'm guessing!)


I also made polenta in my PC for the first time, using Jill Nussinow's (the Veggie Queen) recipe as a guideline. It was freakin awesome! Polenta in minutes without stirring, good Lord.
I had some roasted red bell, jalapeno and poblano chilis in my freezer, so I diced them small and stirred them into the cooked polenta. I spread the hot polenta onto a small jelly roll pan and let it cool. I then cut the polenta into triangles and broiled them with chedder cheese.
You know what? I don't like commercial chedder cheese anymore! I hadn't had any for years, and it's pretty gross actually.

We just got some incredible apples from a friend's old tree. We' were going to make some applesauce out of them and I just serendipitously decided to read your food blog. Perfect timing. I can't wait to try this!

I'm sad about you closing your other blog. But I'm so glad you're keeping the food and recipes going!! (You can see where my priorities are, lol!)

Things have been going okay with me. Glad to see you're doing well.

My lifestyle hasn't changed, KB's come first, and as I continue on developing my own training I'll keep writing about it.....just not every single detail about with watch-along videos! lol

Does the world really need one more combination swing workout? (to add to the already hundreds I posted?) I'll tell you what.....when someone tells me, "Hey, I've done all of your workouts, can I have more?" I'll tell them what my hourly fee is, LOL!

Not that the world needs another applesauce recipe either!

Gold stars to you for creative use of the pressure cooker. I better watch out or you'll take my job LOL.

I love what you did with the polenta. I ought to have you do my recipe testing but that's another big project. Now back to work for me.

I will probably always make the red beet version of applesauce now! I mean, why not? Great way to increase daily variety of veggies. Now, I have 3 bunches of beet greens I have to use up.

I'm thinking some risotto with beet greens and pancetta, in the PC of course, and maybe some beet green and walnut pesto?

I made your Thai Carrot Soup today, and it was dee-lish! I can already see how I can adapt it for a chicken and rice meal...so, see, I'll be a "non-vegetarian Jill"

BYW the roasted peppers in the polenta gave it just enough flavor and heat, I'll do it again, as I always seem to have extra jalapenos at the end of the week that I roast and freeze so I don't waste them (all $.50 worth, lol)

Mmmmmmm, you're always making the yummmiest stuff! I just gave my sister-in-law the gift of the PC and she's loving it. I think my brother is using it more than she is!!

Glad to see that you're doing so great! I miss you and want to come visit some time soon.. trying to make it happen and will let you know.

Ok Tracy, I'm not giving up, but so far I'm having problems with using the proper amount of water. I've been doing beans and greens. I will take your advice and keep practicing. I'm off to get produce in the morning :)

I don't think there is anyone on the planet that has done more swing combos than you. Moreover, I have closed my blog too. the more I am off my ass living life instead of sitting on my ass in front of the computer, the more I get done and its time to get to living. I think the reason your life rocks and that you have all these great recipes is that you live it! time for me to do the same :) PS I am sending you some pics of what I ate in the philippines...check your email!
