......and I think I have a winner! Avocado Tomato Smoothie

Tomato season may be way off, but good for me I have loads of homemade tomato soup and sauce in my freezer! In addition to the tomatoes, my homemade tomato soup has loads of onion, celery, carrot, jalapeno, and made with my own chicken stock. Not only was this smoothie delish (as Rachel Ray sould say), but off the charts in terms of nutrition.

Avocado, Tomato and Spinach Smoothie

1 c. lowfat cottage cheese 180 cal
1/3 med avocado 100 cal
1 c. tomato soup 80 cal
2 tsp sugar (to bring out the tomato flavor) 30 cal
2 tbl pysillium fiber 35 cal
handful of spinach 0 cal
juice of 1/2 lemon 0 cal (I would've used lime, but I didn't have one)
ice 0 cal

This smoothie will, for sure, be part of my daily menu for the rest of the week, except for one day when I'll have to use the one serving of cooked butternut squash that I still have in the fridge.

Monday, my favorite day!

Tomorrow is my favorite day, Monday. Normally I would have a load of cooking to do first thing in the morning, but right now I'm getting a head start on my chickens. I thought I might roast the two I bought, but I changed my mind and decided to pressure cook them. Mainly for these reasons....less calories as the meat is poached, easier overall to harvest the meat from the bones (besides I needed some chicken for a dinner salad tonight!). But speaking of bones, along with the added ones from last weeks roasted birds I'm making a super rich stock for some soup I'll finish tomorrow.

Food plan for week 7

proteins, chicken, lamb, cottage cheese, & canned tuna (if I need it)

chicken veg soup with brussel sprouts or collard greens
cabbage salads with chicken or tuna
cesar salad with chicken and a mix of romaine and shredded cabbage, maybe some brussels
smoothies, avocado tomato and butternut
lentil dal I'll make with lamb stock, add spinach to wilt when it's hot
apple

I kinda overdid raisins and peanuts last night on my day off, so I'm going to try and cut both out completely this next week, including all dried fruits....but I'm not making any promises!
I made the most killer lamb and turkey meatloaf Saturday night and ended up making tacos with it! I used these seriuosly yummy soft corn tortillas our best friends Jen and Greg in Santa Barbara turned us on to.....I never get to eat them so I splurged!

I'm going to be on camera at the end of the week shooting another video, so I'll keep things a bit tighter than I normally would. Still journaling my daily menu, and I hope to share some of that in an upcoming blogpost soon. Interesting stuff.

My life is seriously good.

Ok, now that smoothie I must try. Thanks for sharing.

Also, thanks for posting your menu plan. It's really helpful and inspiring.

Wow, off the charts nutrition, for sure! I may try it!! The maddening thing for me right at this moment is that I have huge avocado tree with tons of avocados and.... they're all out of reach!! Ug!!

Are you filming new training dvds to sell?

I'll be honest, smoothies are something I'm not a fan of. BUT, this one truly looks so gross that I just might give it a try! I know weird, but then again, don't forget that I work in the medical field! I have so many "comments" rolling in my brain right now but won't put down since they will more than likely gross a few people out!
Okay......here comes the dumb question! Is this considered a meal? Just wondering.....
Question #2...if I add "extra" spinach, will this smoothie guaranty a strict press with my 20kg on the right side?!! LOL
I'm scared as to what this will do to my "internal system", but ya never know.....

I made this and it turned out to be more like guacamole than smoothie... should I have added some ice cubes. Not that eating guacamole with a spoon is a bad thing!

Maribel,

I found myself getting hungry last night, wondering what to eat...I pulled up my blog to remind me what was on the list, and ONLY what was on the menu list!

It was a good day.

Bee,

We planted a Haas avocado tree almost 10 years ago, and up until this past year did not see one piece of fruit! Then we figured out it was all being taken before we got to it....(it's planted on the side of our house near the street)

I put a shot of red wine vinegar in the last one. Thanks for the suggestion of the sour/savory option. That idea opens up alot of future possibilities.

Diana,

I almost mentioned that this smoothie is "color challenged", lol

How do you make the color "camo" green? Mix green with red! Normally one of my "no-no's" when creating new recipes!

I was treated to you video 20kg press attempts....be patient and train for it! The physical things I can't do are only a result of not training for them! The 20kg pres on your right side is same as the finish line of your first marathon. How can you expect to do something you don't train for?

And as the next comment mentions...if you don't like guacamole, then you won't like this smoothie (don't forget a bit of sugar!)

Cynical,

I could never eat this without the ice! I accidently made my butternut squash smoothie without ice one time and it was way NOT satifying....even a yogurt and fruit smoothie would not be much fun without the ice.

Recipes are just guides, the true recipe is written with your taste buds...tasting your food and adjusting it to suit you is key.

For me the important bits of this recipe are

ICE! Not too much avocado (I used only 1/3 of a med size fruit), and the sugar, adjust to your own taste. Oh, and if you don't like guacamole, or cold gazpacho soup, then this smoothie is not for you!

Thanks for giving it a go! (I still think the corn was a good idea, lol)
