Curry Yogurt Dressing...one more time!

I spent alot of time writing the other blog post, but here's the basic dressing recipe for my cabbage salad. This afternoon I will write more about washing, storing and prepping fresh veggies because I'll be picking up my CSA box and can take some pictures to demonstrate, as I'm leaving for the FMS workshop in St Paul tomorrow, and I can't cook or eat my veggies until I get back, so storage is important.

Curry dressing

1/2 cup yogurt
1/2 cup mayo
2 tbl. honey or sugar
2 tbl apple cider vinegar
1 tbl. lemon or lime juice
1 garlic clove, crushed
1-2 tsp. curry powder

I love curry! This looks so doable. Can this be used on chicken and other salads as well? Or is it made special for your cabbage?

Megan,

Also remember that you can use whatever ratio of yogurt to mayo as you want....sometimes I skip the mayo all together and just use yogurt. Not as satisfying, to be honest, but when I use raisins in the salad it makes up for it.

Lauren,

It absolutely can be used for chicken salad, but don't forget to add the veggies!

Chicken
celery
green onion
jalapeno
finely shredded red cabbage
fuit....grapes, raisins, pinapple, mango, etc.

Or whatever veggies you have on hand.

Missed you in LA, but I heard talk of a San Diego Cert next year.

Oh Tracy, Tracy, Tracy... Ive had major anxiety for weeks now because of the 2 week cruise I was going on with my family. I managed to get through it with only gaining ONE pound!!! I took the stairs rather than the elevator and hit the gym on the ship every day. It was the most incredible work out I will ever in my life have.. watching the Alaskan glaciers roll by and salmon jumping as I run on the treadmill. I wish my gym had that view! LOL
Im so proud of myself for not back sliding on my routines! :D

Liz,

I got goose bumps! Thank you so much for connecting with me.

I thought about you and that cruise, and geez, constant buffet style food and eating! If you can travel like that I certainly shouldn't whine about my 3 day trips...I'm going to think about that....2 weeks and you only gained 1 stinkin' pound? I gained 2-3lbs. in 3 days, and it takes me 4 days to get it off....and I walked my ass of....and swung, and yoga-d, lol.
